FUD Oaxaca cheese is a semi-hard cheese that is a staple in Mexican cooking. It is named for Oaxaca, a state in Southern Mexico that is one of several cheese-producing regions in the country. Try it on pizzas, grilled cheese sandwiches, and lasagnas or in traditional Mexican dishes such as quesadillas, tacos, empanadas, and tostadas.
