The Lalvin QA23 yeast, offered in a 5-gram dry package, is a top choice for crafting exceptional white and rosé wines, with a fermentation capacity suitable for up to 6 gallons (23 liters). This yeast is particularly revered for its ability to enhance the varietal characteristics of grapes, making it ideal for aromatic white wines like Sauvignon Blanc and Chenin Blanc.
QA23 is known for its low nutrient and oxygen requirements, allowing it to conduct steady and reliable fermentations, even under challenging conditions. Its ability to ferment at low temperatures helps preserve the primary fruit aromas, ensuring the wine's freshness and vibrancy are maintained.
This strain's contribution to wine includes promoting a balanced mouthfeel and increasing the complexity of the aroma profile, with potential notes of tropical fruit, citrus, and flowers. The Lalvin QA23 yeast is an excellent tool for winemakers aiming to produce fruit-forward and expressive wines, highlighting the unique characteristics of the grape variety and terroir.
